Mini Pizza Spirals

Whether you need an easy last-minute snack or some kid-friendly hors d’oeuvres for your next get-together, these little bites will fit the bill.

Makes 12 spirals

Ingredients
Olive oil or nonstick cooking spray
3 slices whole-wheat or white bread
1/4 cup marinara sauce
1/2 cup grated mozzarella cheese
2 tablespoons chopped pepperoni
Dried oregano

Directions

1.    Place rack in upper-third of oven and preheat to 425 F.

2.    Brush the insides of a 12-hole mini muffin pan with olive oil or coat with cooking spray.

3.    With a rolling pin, flatten bread slices so they’re easier to roll up. Spread each slice with a generous tablespoon of marinara sauce, and then sprinkle with mozzarella and pepperoni.

4.    Starting with the short end, roll each bread slice up tightly. Trim off crust ends from each roll, and then cut rolls crosswise into 4 pieces.

5.    Place one roll, spiral-side up, in each mini muffin cup. Sprinkle with oregano.

6.    Bake for 8 to 10 minutes or until toasty. Let stand for a minute before removing from cups. Serve warm.
